They may not be induction- or dishwasher-safe, but you can stick them in ovens up to 400° for some added convenience. Sometimes a single frying pan is all you need to achieve Chef’s Table glory. Other recipes require the full treatment—steaming, boiling, sautéing.

The Dutch oven is 5 quarts and the deep straight-sided sauté pan is only 2.5 quarts. However, when you cook directly in aluminum some of the metal leaches into your food, giving it a gray-ish cast. The vast majority of aluminum cookware has some kind of finish, either enamel or nonstick, to prevent this from happening and also make it easier to clean. Aluminum cookware can’t be used on an induction burner unless it has a layer of stainless steel in the base. Many cookware sets are claimed to be dishwasher safe, but in our experience, you may find yourself scrubbing off stubborn bits by hand — even with some nonstick pans. You’ve probably seen the Instagram ads for this since it’s in every food blogger’s kitchen.

They’re lightweight and should be used over low to medium heats; the thermo-heat indicator lets you know when it’s ready to use. In our tests, scrambled eggs and pancakes cooked evenly with zero sticking. Plus, the griddle was a fun addition for breakfast items, especially bacon.

Generally, nonstick pans are best used at medium or low heat, and never heat an empty pan. Be sure to check the oven-safe temperature capabilities of your pans to avoid overheating, which can cause the coating to flake or chip. Check care instructions to determine if your set is hand wash only or dishwasher safe. Even if a set is dishwasher safe, many manufacturers recommend hand washing to protect the coating and extend the life of your pans. You’ll want to consider features like whether the pans are dishwasher safe or oven-safe, and if so, up to what temperature. If the handles are loose or broken, or the bottom of a pan is warped , it’s time to shop. And of course, when the coating of a nonstick pan is flaking, it’s got to go. However, these finishes don’t last forever; eventually they will lose their stick resistant properties. That might not bother you if you bought an inexpensive omelet pan but can be upsetting if you’ve invested in an expensive set. Copper cookware heats the most evenly and is the most responsive (meaning, take your pan of hollandaise off the burner and it stops cooking immediately so there’s no danger it will curdle).
