I tested the Clermont with some massive beef shanks on a cold and windy day (-20°C / -4°F). In order to achieve a perfect fall-off-the-bone result, I had to keep the smoker temperature at 275°F for 10 consecutive hours, aiming an internal temperature of 203°F to 205°F. Throughout the cooking process, the Clermont maintained a temperature between 255°F and 285°F, which is much better than I expected in such poor weather conditions. Wow, that is an insanely good price given the MSRP on their website.
Wood pellets can become soggy due to moisture/humidity and can cause the auger to bind up or not push pellets to burn chamber. If grill will be left un-attended for a long period of time, we recommend you remove unused pellets. Always store wood pellets away from heat and in a dry location. The Elite grill also cgwm-081 features a large 24-pound hopper that can keep the smoker going for up to 62 hours all by itself. As for the cooking area, it’s not the biggest on our list with 844 square inches, but that’s enough for most families and small gatherings. Make sure the auger is free from debris and other objects. Step 1 Open hood to cooking chamber and remove cooking grates, heat plates and heat baffle from inside the grill. Never use heating grade wood pellets as they are not safe for cooking. NEVER add cooking pellets to a hot fi re pot by hand.
So how much of that 1,400 square inches of the cooking area is actually the main cooking grate, hence can be used for grilling? I’ve checked the Cuisinart sales literature/manual cgwm-081 and the size of the main cooking grate is not stated.
