In cooking performance, the Weber was the best and most hassle-free grill in our tests. Because of its dominance, the Weber kettle has spawned a lot of copycats. In our research, most proved to be cheap knockoffs that weren’t worth the minor savings weber q (the basic Weber kettle is $100; the cheapies, maybe $75). We resolved instead to find a kettle that could compete with the Weber on performance, price, and value. But we also opened our search to include charcoal grills of different designs.
For the low-and-slow, whole-grate test, we let the same batch of coals burn down to the white-ash stage with the lid open, which took about 20 minutes. We then reoiled the grates and distributed a whole cut-up chicken—two each of breasts, thighs, drumsticks, and wings—skin side down. Then we closed the lids for 45 minutes, occasionally checking for charring and redistributing the pieces as necessary (ideally, it wouldn’t be necessary at all).
I’ll continue to use my gas grill for weeknight dinners, but turn to the Weber when hosting things that I want to feel more like an event. In doing so, hopefully my kids will absorb the same Dad-imbued, charcoal-infused summertime impressions that waft through one’s memory for a lifetime. One thing that I noticed while putting the grill together was that the materials just seemed chintzier and more flimsy than those on the Weber Kettle Grill my dad owned.

If you don’t install the three-leg assembly supporting the kettle correctly the first time, there’s no going back. Removing and reassembling certain parts will cause them to loosen, and sooner or later when you try to move the grill around your backyard, it will start to fall apart or even collapse. With its illustration-only manual, Weber doesn’t make this critical assembly easy—nor does it warn you of the consequences if you don’t get it right the first time.

A minor complaint for sure, but I think it is an easy and obvious fix. According to Lilly, it’s always better to have a grill thermometer with numerical readings instead of indicators of “Smoke, Barbecue, Grill” so the exact temperature is clear. However, he noted that there are plenty of aftermarket grill thermometers available to swap out a substandard thermometer that a model might come with. There are many other standout features to keep in mind while comparing different charcoal grill models.
