As we tested this over the course of two weeks, it rarely had any faults. The 513 square inches of cooking space was consistently even in heat, with some slightly hotter temperatures observed directly over the burners. The sear zone produced delicious steak, though you might want an additional burner like we did. While the Weber is nearly perfect in its simplicity, I do wish they had given this premium model bigger, better wheels. As is, it requires some effort to roll the grill through the grass into storage or when the kids need the yard for a soccer game or water fight. There’s nothing quite like the simple pleasure of cooking over charcoal on a nice grill like this. If you’ve never cooked with charcoal before, the Original Kettle is an excellent grill for discovering this style of barbecue. When it comes to cleaning the lid and bowl, burning charcoal and cooking food will cause carbon to accumulate on them. This is normal, and if you’ve used charcoal before, you’ve seen it; it looks like peeling paint.
Whether entertaining on a small patio or in a big backyard, the need to grill has no limits. After dinner, fold down the side table, push together your chairs, and toast to the Performer charcoal grill. After testing and reviewing it for over 6 months, I can safely safe I’m a big fan of the Slow N’ Sear, however, I don’t think it’s absolutely necessary to make smoking feasible on a charcoal grill.
