Our favorite set of nonstick cookware is the 11-piece Symmetry collection from Circulon, which includes seven pots and pans and four lids. These sharp-looking Circulon pots and pans proved incredibly resistant to the stickiest food while also providing the most consistent temperature across the cooking surface. The Gotham Cookware Sets Steel Stackable Pots are composed of aluminum, and it’s the best choice for everyday uses. Like additional Gotham cookware, these pots and pans’ surface also has non stick cast-texture titanium and ceramic coating. What’s more, there’s absolutely no requirement to use oil or butter or bypass while preparing foods.
Both of those compounds have been accused of possible negative health and environmental impacts. None of the Gotham Steel Cookware sets are compatible with induction stovetops. The Gotham Steel Tri-Cerama nonstick coating is free of PTFE, PFOA, PFOS, and other toxic elements. Unfortunately, despite a serious attempt by Gotham Steel, we found that the pans do not stand up to the intense demands of a professional kitchen as much as a home cooks kitchen.
The proper care of this cookware set is where things might get tricky. Gotham Steel claims no temperature is too hot, utensil too abrasive, or treatment too rough for their nonstick ceramic coated pots and pans. However, some other Gotham Steel pan reviews dispute this slightly, which leads to talking about the durability of these pots and pans. Other pans tend to weather over time, but some cookware sets manage to miss the mark right out of the box. Gotham Steel’s cookware sets deliver a ceramic nonstick surface that can last through many years of meals to come if taken care of properly.
The Symmetry cookware also outperformed all the others we tested in terms of temperature consistency across the surface. Often, food will cook at a different pace because the temperature of the pan varies at different spots of the cooking surface. But the cooking surface of the Circulon line maintains a remarkably even temperature. First we fried an egg in the smaller skillet of each set; then we scrambled an egg in the same pan. The fried eggs were extremely easy to remove from each of the six pans. However, we found that when scrambling eggs, those pans with a textured surface often collected food particles in the grooves and dimples.
The FDA performed studies on cookware that was coated with PFAS, or per- and poly-fluoroalkyl substances. These studies showed that the chemicals had leached into the water supply in the areas of manufacturing and caused serious health issues. In an attempt to clean up the environment of these hazardous chemicals, avoid using cookware with these chemicals and search for alternatives. Overall, I am not impressed with the performance of Gotham Steel cookware. It heats up fast, but the non-stick coating breaks down after a few months, the handle is uncomfortable, and the cooking surface warps in the center.
