The beaters worked on a mid-level speed until we’d added about half of the dry ingredients. At that point, we could hear the motor struggling, and the beaters slowed down. Then, per the instructions, we switched out the beaters for the dough hooks and added the rest of the dry ingredients. At the appropriate speed, the dough hooks did what the beaters couldn’t. 3 level speed setting, a powerful motor, and longer-than-usual beaters.
If that’s your case, our budget pick is another great, more basic option that’s still powerful enough to handle doughs and batters. All of the beaters are dishwasher safe, and you can easily wipe down the mixer with a damp cloth (although all hand mixers have vents—to keep the motor from overheating—that can trap food). We’ll be keeping this mixer in heavy rotation whenever we’re in the kitchen. The mixer revved right up for the whipped cream test and got us to medium peaks in five minutes and stiff peaks 30 seconds after that. It also created a meringue from egg whites in five minutes flat.

This lightweight hand mixer comes out of the box looking simple and stylish, with the mixer attachments lying flush against the body of the mixer. It’s very slim, which made it easy to hold, and it would fit comfortably in many kitchen drawers. While this mixer was lightweight, it did feel a little awkward at times, it was somewhat difficult to scrape dough from the bottom of the bowl. Unlike the pricier models, though, this mixer had a simple flip up or down button for speed that worked smoothly. The attachments ejected a little wonkily — we pressed the button several times before they popped off — but they cleaned up easily. Lastly, the Breville comes with snap-on storage and a swivel cord, both of which are extremely handy features.
The Cuisinart HM-90BCS 9 Speed Power Advantage Plus Hand Mixeris easily one of the best mixers on the market. There is a speed for any situation, the SmoothStart feature folds ingredients in before accelerating, and the storage container fits everything perfectly. Very rarely does anyone cuisinart soup maker complain of the fit being either too tight or too loose, which has been a fairly common annoyance with other brands. Users also like it because rather than the mixer and accessories being stored separately, everything is kept together in this one place—directly with the hand mixer.
